Death Stranding keeps its saves outside the Steam userdata system most PC games use. Both the Steam and Epic builds store them under a KojimaProductions folder in local app data, inside a subfolder named with your account ID. Backing up that whole folder is a complete backup, and restoring it is just copying it back.
The wrinkle is the edition split. The Director's Cut is a separate app with its own folder, and saves do not carry over by copying files. You export a transfer.dat from inside the base game first, then import it from inside the Director's Cut. On Linux the same folder layout exists inside the Proton prefix for app ID 1190460.
