Samsung DeX is a mode, not a folder of documents. Toggles live in phone Settings under Connected devices, with window positions cached in app storage.
Files you create in DeX save to the same gallery and My Files locations as phone mode. Screenshots from DeX land beside normal captures. There is no separate DeX drive to back up.
Where Samsung DeX stores this, by platform
/data/data/com.sec.android.app.desktoplauncher/
DeX launcher cache (root only to browse). Real controls are Settings > Connected devices > Samsung DeX. Captures save to /sdcard/DCIM/Screenshots/. Back up My Files normally.
