Where Are Encased Save Files Located?

Encased is a Unity RPG, and it saves exactly where Unity games usually do. On Windows that means a Dark Crystal Games folder inside LocalLow, with your profiles and saves underneath.
The structure has two levels. UserProfiles holds one folder per profile, and each profile contains its save slots. Grab the profile folder and you have everything for that character set, settings included.
Linux players get a native build with an XDG-style path instead of a Proton prefix, which is rarer than it should be for Unity ports.

How do I move my Encased characters to a new PC?
Copy the whole Encased folder with the game closed, or at least the UserProfiles subfolder. Steam Cloud also syncs it, but a manual copy survives account mixups.
What is the difference between UserProfiles and Saves?
Those are individual save slots inside your profile. Profiles group characters; the Saves inside them are your actual save points. Back up at the profile level to keep the set together.
