Fortnite replays are not video files. Each match is written as a .replay data file that only Fortnite can play back, and those files live in one fixed folder under AppData rather than next to the game. On a fresh install that folder does not exist yet, which confuses people who go looking for it straight away.
You also have to opt in first. Open Settings, go to the Game tab, scroll down to the Replays section, set Record Replays to On, then finish a match. The Career tab in the lobby has an Open Replay Folder button that opens the folder directly, which beats typing a hidden path by hand.

Recording is off by default, so the Demos folder only appears after you enable it and play a match. Replays only play in the version that recorded them, so save anything worth keeping before an update. Only Windows writes these files: the macOS build is gone, and the iOS, Android, and Switch builds have no replay system at all.
