Where Does ioBroker Store Config and Objects?

ioBroker centralizes its whole world in one install directory. Configuration, the objects and states databases, adapter data and backups all live under /opt/iobroker on a standard install.

The built in backitup adapter exists precisely because that folder is the whole system. A full copy of it plus the installer version restores everything onto fresh hardware.
