Where Does macOS Track Installed Packages?

macOS records every installed package in a receipts database under /var/db, the ledger behind App Store and pkg installs.

Every proper Mac install leaves a receipt. Pkg installers, App Store apps, and system updates each drop a small record noting package ID, version, and install time.

The directory answers which version of what arrived when, invaluable during broken update archaeology. Pkgutil reads the database from Terminal for queries and file lists. Receipts never contain the software itself, only proof it passed through.
