Remnant 2 moved saves out of AppData into your Windows Saved Games folder, unlike the first game. Below Remnant2/Steam sits a numeric folder per account with profile.sav, save_X.sav per slot, and rolling .bak copies.
Corruption is common enough that the .bak files are a feature, not clutter. Rename the newest .bak1 pair to .sav to roll back one step, after disabling Steam Cloud so it does not fight you.
