Mullvad splits daemon logs from GUI settings on every platform. Logs sit in system log directories with rotation, while settings live in a small platform specific root the uninstaller optionally clears.
Support never receives anything automatically. You generate a problem report from Settings, review its redacted contents, and send it yourself, which keeps the no-logs story intact.

C:\ProgramData\Mullvad VPN\daemon.log
Plus rotated copies and DAEMON.DMP on crashes. Settings at %LOCALAPPDATA%\Mullvad VPN. Cache and installers under ProgramData cache and Temp mullvad-updates.
