OMSI 2 has no Documents folder and no AppData. Everything lives in the install directory: saved situations in Situations\ (.osn/.owt), driver files and portraits in Drivers\, maps, buses and tickets in their own trees. The community wiki states it plainly: all files, one directory.
That makes backup trivial and reinstalls hazardous. Copy the folder and the sim moves with every add-on intact. Verify through Steam with heavy modding, though, and the check happily deletes anything it does not recognize, so snapshot first.
