Parkitect keeps parks in a Saves/Savegames tree, with a plain settings.txt beside them for options. The Windows location follows Documents convention, which makes it one of the easier theme park builders to back up by hand.
Linux breaks the pattern in a way that matters. There the saves sit inside the Steam install folder rather than a home directory, so uninstalling the game deletes the parks with it. Linux players should keep an outside copy as a matter of routine.
