Shadow of War stores its save as a single .sav file in %LOCALAPPDATA%\WB Games\Shadow of War. The file name starts with a hex SteamID3 for Steam copies, or your computer name for GOG. The game keeps five numbered backups next to the main save.
Steam Cloud backs up only the latest save, so those local backups are worth keeping. The Microsoft Store build uses a packaged wgs folder instead. If you move a save between stores, the file name scheme changes with it.
