Gnumeric keeps things simple. Your spreadsheet is a file wherever you saved it, defaulting to the native gnumeric XML format. The app converts Excel and OpenDocument formats on open and save, including through the ssconvert command line tool.
Settings are the surprise. Modern Gnumeric stores preferences in the GNOME dconf database rather than a dotfile in your home folder. Old mailing list posts mention a gnumericrc file, but current installs will not have one. Use the preferences dialog for everyday tweaks.
