Where Does Mimestream Store Data on Mac?

Mimestream installs from its own DMG (never the App Store) into /Applications/Mimestream.app, and keeps accounts, Core Data cache, offline mail and attachments in a sandboxed Containers folder under ~/Library (remove any Mimestream named folder there on uninstall).

It speaks Gmail API rather than IMAP, so true mail lives on Google servers and the container is disposable cache. Attachment trouble or bloat ends at the in app Safe Mode cache reset, which refetches from the server. Exact bundle folder names may vary by version; match on Mimestream in the name.
